Summer asparagus and leak risotto

Tonight I made this delicious risotto  with fresh summer asparagus, leak and mushroom. It made sense with one of us recovering from wisdom teeth removal and the other on a strict fod diet. I found this recipe on a site I frequent called the Gluten free Goddess.  It’s a great blog filled with delicious meals, sides,appiteizers, and desserts that are gluten free and/or vegetarian and vegan.

I made a few slight modification based on our personal tastes, adding  3/4 cup diced mushrooms, doubling the amount of leak called for, adding fresh ground pepper while cooking and  adding 1 table spoon of dairy free margarine. If you can have dairy add in fresh parmigiana cheese it would be heavier but delicious.
